As low as you would like to go. (If you have the money) The pump needed to take such a room down to just 1 torr would cost tens of thousands and take a day or two to hit that pressure. Really massive pumps would be required to drop the pressure into fusor range (1 micron) in a week.
There are only a few such setups in the US and most are government owned and operated. (Space environmental chambers, etc.)
