You're going to be welding stainless steel. TIG (or Heliarc) is going to be the easiest way to stick the metal together. I have seen folks weld SS with a MIG (wire feed with gas shroud), but it was hard to get a good weld.
Finding someone to TIG weld your stuff shouldn't be too hard. Look for a shop that welds bicycle frames or similar things. Those guys are used to doing high quality, precision welds. A shop that does exhaust systems for rally and race cars (often they use SS) might be another alternative.
What you don't want is the guys who weld fences or ships.
